Ceremonial matcha prepared with traditional chasen (bamboo whisk)
"Matcha is not merely a beverage β it's a meditation in a bowl. Each sip connects you to centuries of Japanese tea tradition, mindfulness, and the simple beauty of the present moment." β Sensei Yuki Tanaka, Tea Master
Welcome to the art of Matcha Perfection at The Pookie Cafe. Nestled on Bengaluru's iconic MG Road, our ceremonial-grade matcha has become a sanctuary for tea lovers β a place where Japanese tradition meets Bengaluru's vibrant cafe culture. This isn't just green tea powder; it's tencha stone-ground into fine jade dust, shade-grown for 20-30 days before harvest to maximize chlorophyll and L-theanine. The result: a vibrant, umami-rich tea that calms the mind while energizing the body.
Matcha translates to "powdered tea." Unlike traditional green tea where leaves are steeped and discarded, matcha suspends the entire leaf in water β delivering the full spectrum of nutrients, antioxidants, and flavor. The journey begins in Uji, Kyoto, Japan's premier tea region. Tea bushes are shaded for three weeks before harvest, forcing the plant to produce more theanine and chlorophyll. After harvest, leaves are steamed, dried, de-veined, and stone-ground into a fine, vibrant powder. It takes one hour to produce just 30 grams of ceremonial matcha.
At The Pookie Cafe, we source our matcha directly from Okumidori and Yabukita cultivars in Uji, Kyoto. It's ceremonial grade β the highest quality, reserved for traditional tea ceremonies. Our matcha is vibrant emerald green (not dull yellow), with a sweet, creamy umami flavor and zero bitterness. We test every batch for color, aroma, and texture, ensuring only the finest reaches your bowl. In 2025, our matcha was awarded "Best Imported Tea" at the India Tea Festival.
The tea ceremony, or chanoyu ("hot water for tea"), is a Japanese cultural ritual influenced by Zen Buddhism. It involves the ceremonial preparation and presentation of matcha. The host uses specific tools: chasen (bamboo whisk), chawan (tea bowl), chashaku (tea scoop), and natsume (tea caddy). The ritual emphasizes harmony (wa), respect (kei), purity (sei), and tranquility (jaku). At The Pookie Cafe, we honor this tradition while making it accessible β our trained tea masters prepare each bowl mindfully, inviting guests to pause, breathe, and savor.
"Matcha is like a koan β the more you drink, the less you need to say. It speaks directly to the soul." β Tea Master Sen no RikyΕ« (1522-1591)
Matcha is a nutritional powerhouse. One bowl of matcha has the antioxidant equivalent of 10 cups of regular green tea. It contains:
Studies show matcha boosts metabolism, enhances focus, supports heart health, and strengthens the immune system. It's no wonder Zen monks have drunk matcha for centuries during long meditation sessions.
There are two main styles of matcha preparation. Usucha ("thin tea") uses about 1.5-2g matcha to 70ml hot water, whisked into a frothy, light tea β perfect for daily drinking. Koicha ("thick tea") uses double the matcha (3-4g) to half the water (40ml), creating a dense, syrupy tea reserved for formal ceremonies. Our cafe serves both styles. The whisking motion is crucial β using a chasen (bamboo whisk) in a "W" or "M" pattern, never circular, to create microfoam without introducing bitterness.
Ingredients & Tools:
Step-by-Step Method (Usucha):
1. Never use boiling water β it scalds matcha, creating bitterness. Ideal: 75-80Β°C (cool 30 sec after boil).
2. Always sift β clumps lead to lumpy, uneven tea.
3. Soak your chasen β before whisking, soak bamboo whisk in warm water for 1 minute to soften tines.
4. Store matcha properly β in an airtight container, refrigerated, away from light and heat. Use within 2-3 months.
5. Look for vibrant green β dull yellow/brown matcha is old or low grade.
At The Pookie Cafe, we celebrate matcha in many forms. Our Matcha Latte (with organic oat milk and a touch of honey) is a customer favorite. We also craft Matcha Tiramisu (matcha-soaked ladyfingers instead of espresso), Matcha Mochi Donuts, and Matcha Affogato (matcha poured over vanilla gelato). Each creation honors matcha's delicate flavor while introducing it to new audiences. Our pastry team works directly with tea masters to ensure balance β the matcha should complement, not overpower.
Meera K., Tea Enthusiast: "The matcha at The Pookie Cafe transports me back to Kyoto. It's vibrant, creamy, and whisked to perfection β the best I've had outside Japan."
Chef Akira T. (Washoku Chef): "Finally, a cafe in Bengaluru that understands matcha. The ceremonial grade is authentic, and their attention to water temperature and whisking technique is commendable."
