The sun rose over MG Road on the morning of October 5th, 2025, but the lights inside The Pookie Cafe had been on for hours. Opening a cafe in the city’s most iconic district wasn't just about business—it was about filling a gap in the soul of the street.

MG Road is known for its high-speed energy and corporate rush. We wanted to offer the "Pookie" experience: a soft landing for those who needed a moment to breathe. The "Dusted Tiramisu" was our mission statement. Tested over forty times, it became our flagship from day one.

Today, every plate carries the memory of that first morning — the quiet before the rush, the first cloud of cocoa floating through the air. That's the Pookie promise.

The Science of the "Gravity Sift"

At The Pookie Cafe, the cocoa powder isn't an afterthought. We developed the "Gravity Sift" method. Our chefs sift the cocoa from a specific height, allowing the particles to aerate as they fall. This creates a micro-layer of air between the cocoa and the cream, ensuring that the first thing your tongue touches is dry, intense chocolate, followed immediately by the cool, melting mascarpone.
